Description

  • 3 large English cucumbers (or 2 Persian cucumbers), sliced into thin half-moons
  • 1/2 medium red onion, thinly sliced
  • 1/3 cup apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 clove garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 cup fresh dill, chopped
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. Rinse cucumbers and slice them into thin half-moons (about 1/4-inch thick). If using standard cucumbers, peel and scoop out seeds first.
  2. Slice the red onion thinly and place slices in a bowl of ice water for 10 minutes to mellow the flavor. Drain and pat dry.
  3. In a small bowl or jar, whisk together apple cider vinegar, olive oil, honey, minced garlic, salt, and black pepper until emulsified.
  4. Add the cucumber slices and drained onions to a large mixing bowl. Pour the dressing over the top and sprinkle with chopped fresh dill.
  5. Toss the salad gently but thoroughly to coat all ingredients. If using feta, fold it in lightly.
  6. Cover the bowl and chill in the refrigerator for at least 10 minutes (or up to an hour) to allow flavors to meld.
  7. Toss one more time before serving. Taste and adjust salt if needed. Serve cold or at room temperature.

Notes

For best texture, use English cucumbers which have thin skins and fewer seeds. If using standard cucumbers, salt them 10 minutes before dressing to remove excess water, then rinse and pat dry. Do not freeze this salad as cucumbers will turn to mush. It keeps well in the refrigerator for up to 3 days.
