- 2 large chicken breasts (about 1.5 lbs / 680g)
- 4 cups mixed vegetables (potatoes quartered, carrots cut into sticks, red onion wedges)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1½ teaspoons kosher salt
- ½ teaspoon black pepper
- Lemon wedges (optional, for serving)
Instructions
- Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Let chicken breasts sit at room temperature for 10-15 minutes. Pat dry with paper towels.
- Chop vegetables into uniform 1-inch pieces. Toss with 2 tablespoons olive oil, half the garlic, half the oregano, salt, and pepper. Spread in a single layer on the baking sheet.
- In a small bowl, mix remaining olive oil, garlic, oregano, paprika, garlic powder, onion powder, salt, and pepper. Rub mixture all over chicken breasts. Pound to even ½-inch thickness if necessary.
- Place chicken on top of or between vegetables on the pan.
- Roast for 20-25 minutes until chicken reaches 165°F (74°C) and veggies are caramelized. Optional: Broil for 1-2 minutes at the end for extra crispiness.
- Remove from oven and transfer chicken to a plate to rest for 5 minutes.
- Serve chicken over vegetables, drizzled with pan juices and fresh lemon juice.
Notes
Do not crowd the pan to ensure roasting instead of steaming. Pat chicken dry for maximum crispiness. Cut vegetables into uniform sizes for even cooking. Rest chicken for 5 minutes to retain juices. This recipe is naturally gluten-free.
