- 1 cup sharp cheddar cheese, shredded
- 1 small yellow onion, finely diced
- 2 tablespoons butter, melted
- 2 teaspoons whole grain mustard
- 1 tablespoon everything bagel seasoning
- Flaky sea salt, for finishing
Instructions
- Preheat oven to 400°F (200°C). Line two large baking sheets with parchment paper.
- Thaw puff pastry sheets on the counter for 30-40 minutes until pliable but still cold.
- Lightly flour a work surface and rolling pin. Unfold pastry and roll each sheet slightly to smooth creases into a 12×12 inch square.
- Spread diced onions evenly over the dough, leaving a half-inch border. Sprinkle with shredded cheddar cheese.
- Lay ham slices over the cheese, overlapping slightly to cover all gaps. Dot with whole grain mustard.
- Starting from a long edge, roll the dough up tightly. Brush the edge with water or beaten egg to seal. Pinch the seam to close.
- Using a sharp knife, cut the log into 12 even slices (about 1 inch thick) using a gentle sawing motion.
- Place pinwheels cut-side up on prepared baking sheets, leaving 1 inch of space between each.
- Brush tops with melted butter and sprinkle generously with everything bagel seasoning.
- Bake for 15-18 minutes, rotating pans halfway through, until puffed and golden brown.
- Cool on the pan for 5 minutes. Sprinkle with flaky sea salt and serve warm.
Notes
Keep the dough cold to prevent sticking and ensure clean cuts. Use deli lunch ham rather than thick-cut holiday ham for easier rolling. If your kitchen is hot, chill the rolled log in the fridge for 10 minutes before slicing. For extra shine, use an egg wash instead of butter.
