  • 1 tablespoon cornstarch
  • 2 tablespoons truffle oil (white or black)
  • ½ cup freshly grated parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 1 teaspoon parsley flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
  2. Place frozen fries (do not thaw) in a large bowl and sprinkle with cornstarch. Toss gently to coat evenly.
  3. Spread fries in a single layer on baking sheets, ensuring they are not crowded.
  4. Bake for 20 minutes, flipping fries halfway through at the 10-minute mark.
  5. While fries bake, mix grated parmesan, garlic powder, onion powder, salt, pepper, and parsley flakes in a small bowl.
  6. Remove fries from oven and reduce temperature to 400°F (200°C).
  7. Sprinkle the cheese mixture evenly over the fries and drizzle with truffle oil. Toss gently to coat.
  8. Return to oven and bake for 10 minutes, or until cheese is bubbly and golden.
  9. Check at 8 minutes to prevent burning. Serve immediately while hot and crispy.

Notes

Do not thaw frozen fries before baking as this causes sogginess. Use freshly grated parmesan, not pre-grated, for better melting and crisping. Ensure fries are not crowded on the pan to allow for proper air circulation and crispiness. Truffle oil loses flavor if cooked too long, so add it towards the end. Serve immediately as fries lose crunch if they sit.
