  • 6 cloves garlic, minced

  • 1 tablespoon rice vinegar
  • 2 tablespoons chicken broth (or vegetable broth)
  • 1 teaspoon Sriracha or chili flakes (optional)
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon toasted sesame seeds (optional)

Instructions

  1. Pat the salmon cubes completely dry with paper towels and season with salt and pepper.
  2. Sprinkle cornstarch over the salmon and toss gently to coat lightly; shake off excess.
  3. In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, chicken broth, and Sriracha (if using).
  4. Heat neutral oil in a large skillet over medium-high heat until shimmering.
  5. Add salmon bites in a single layer (cook in batches if necessary) and sear for 2-3 minutes per side until golden and crispy. Remove to a plate.
  6. Reduce heat to medium-low and pour the sauce mixture into the same skillet. Stir constantly for 1-2 minutes until thickened and glossy.
  7. Return salmon bites to the skillet and toss gently to coat in the sauce.
  8. Serve immediately, garnished with green onions and sesame seeds.

Notes

Patting the salmon dry is crucial for crispiness. Do not overcrowd the pan, or the fish will steam instead of sear. Use low heat when cooking the sauce to prevent the honey from burning. For a vegetarian version, substitute firm tofu for salmon and use vegetable broth.
