Description
These bite-sized doughnut bites are cooked on a grill to achieve a rustic, smoky flavor with a crispy cinnamon sugar coating. They are quick to make, easy to clean up, and perfect for sharing at cookouts or as a sweet treat.

- ½ cup granulated sugar (for dough)

- 1 teaspoon salt
- ¾ cup warm milk (110°F)
- 3 tablespoons melted butter
- 1 large egg (room temperature)
- 1 teaspoon vanilla extract
- ½ cup granulated sugar (for coating)
- 2 teaspoons ground cinnamon
- 3 tablespoons melted butter (for brushing)
Instructions
- In a large bowl, whisk together the flour, ½ cup sugar, salt, and instant yeast.
- In a separate bowl, whisk the warm milk, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until a soft, slightly sticky dough forms. Avoid overmixing.
- Place the dough in a lightly greased bowl, cover, and let rise in a warm spot for 30-45 minutes until doubled in size.
- Punch down the risen dough and turn it out onto a floured surface. Roll to ½-inch thickness and cut into 1-inch squares or circles.
- Place cut dough on a parchment-lined sheet and let rise again for 15 minutes.
- Preheat grill to medium-high heat (around 375°F). Place a cast-iron skillet on the grate and add a little butter or oil.
- Carefully place dough bites in the skillet, leaving space between them. Cook for 2-3 minutes until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
- Mix the coating sugar and cinnamon in a shallow bowl.
- As soon as doughnuts are cooked, brush them lightly with melted butter and roll them in the cinnamon sugar mixture.
- Serve warm.
Notes
For best results, do not skip the second rise of the dough. If using an air fryer, cook at 350°F for 6-8 minutes, flipping halfway. Use fruit woods like apple or cherry for smoking to complement the sweetness. Store leftovers in an airtight container at room temperature for up to 2 days.
