These crispy air fryer home fries are the easiest, fastest way to get restaurant-quality potatoes on your plate. Crisp on the outside, fluffy on the inside, and flavored with fresh rosemary and garlic powder, they are ready in just 15-20 minutes.
Ingredients
- 2 large yellow or Russet potatoes (about 600g), diced into ½-inch cubes
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh rosemary, finely chopped
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- 1 teaspoon kosher salt
- ½ teaspoon black pepper, freshly cracked
- Optional: ½ cup diced onion
- Optional: ¼ cup shredded cheddar cheese

Instructions
- Dice the potatoes into uniform ½-inch cubes. Place them in a bowl of cold water and soak for 10 minutes to draw out excess starch. Rinse well under cold water.
- Drain the potatoes and spread them on paper towels or a clean kitchen towel. Pat them dry thoroughly until they feel dry to the touch.
- Transfer the dried potatoes to a large bowl. Drizzle with olive oil and add the chopped rosemary, garlic powder, smoked paprika, salt, and pepper. Toss until every cube is coated and glistening.
- Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
- Add the potatoes to the air fryer basket in a single layer. Do not overcrowd; cook in batches if necessary.
- Air fry for 15-18 minutes, shaking the basket every 5 minutes to ensure even browning.
- Check for doneness at 15 minutes. Potatoes should be golden brown and crispy, with a fork sliding easily into the center. If needed, cook for another 2-3 minutes.
- Serve immediately while hot. Top with extra rosemary if desired.

Soaking the potatoes is non-negotiable for crispiness as it removes surface starch. Ensure potatoes are completely dry before seasoning to prevent steaming. Shake the basket every 5 minutes to prevent burning and ensure even cooking. If your air fryer runs hot, add fresh rosemary in the last 5 minutes to prevent burning. For extra crispiness, ensure the basket is not overcrowded.
