- 4 tablespoons (60g) unsalted butter, divided
- 6–8 cloves garlic, minced
- 1 cup (240ml) dry white wine (e.g., Sauvignon Blanc, Pinot Grigio)
- ½ cup (120ml) heavy cream
- 2 medium shallots, finely diced
- ¼ cup (15g) fresh parsley, chopped
- ½ teaspoon red pepper flakes
- 1 lemon, cut into wedges
- Baguette or crusty bread, for serving
- Salt and black pepper, to taste
Instructions
- Prep the mussels: Rinse under cold water, scrub shells, and remove beards. Discard any cracked or open mussels that do not close when tapped.
- Sauté aromatics: In a large pot over medium heat, melt 2 tablespoons of butter. Add diced shallots and cook for 2-3 minutes until soft. Add minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
- Steam the mussels: Pour in the white wine and simmer for 1-2 minutes. Add mussels and remaining 2 tablespoons of butter. Cover and steam for 5-7 minutes, shaking the pot occasionally, until mussels open wide.
- Make the sauce: Reduce heat to low. Stir in heavy cream and heat through for about 1 minute without boiling. Taste and adjust seasoning with salt and pepper.
- Serve: Remove from heat, stir in parsley, and serve immediately in large bowls with lemon wedges and crusty bread for dipping.
Notes
Do not overcook mussels; they become rubbery if cooked too long. Discard any mussels that do not open after cooking. Use a dry white wine you would drink. For a dairy-free version, substitute heavy cream with full-fat coconut milk. The broth is flavorful and meant for dipping bread.
