A rich, garlicky, and creamy chicken dish with sun-dried tomatoes and spinach that tastes better than restaurant takeout but is ready in under 30 minutes.

- 1.5 lbs boneless, skinless chicken breasts
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes (packed in oil), chopped
- 6–8 cloves fresh garlic, minced
- 1/2 cup low-sodium chicken broth
- 3–4 cups fresh baby spinach
- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil (or oil from sun-dried tomato jar)
- 1 tablespoon butter (optional, for finishing)
- Salt and black pepper to taste
Instructions
- Pat chicken breasts dry and season generously with salt and pepper. Pound to an even 1/2-inch thickness.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Remove to a plate and tent with foil.
- Reduce heat to medium. Add minced garlic and red pepper flakes to the pan, stirring for 30-60 seconds until fragrant but not brown.
- Pour in chicken broth to deglaze the pan, scraping up brown bits. Simmer for 1 minute.
- Add heavy cream and Italian seasoning. Simmer gently for 3-4 minutes until the sauce thickens slightly.
- Reduce heat to low. Stir in Parmesan cheese until melted and glossy. Add spinach and stir until just wilted.
- Return chicken to the skillet, spooning sauce over the top. Heat through for 1-2 minutes.
- Optionally stir in butter for extra gloss. Taste and adjust seasoning. Serve immediately.
Notes
Do not skip searing the chicken for flavor. Add cheese on low heat to prevent separation. If serving with pasta, reserve starchy pasta water to adjust sauce consistency. This recipe is naturally gluten-free if broth and cheese are verified. Leftovers store well in the fridge for 3-4 days; reheat gently with a splash of cream.
