  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15oz each) white beans (Cannellini or Great Northern), drained and rinsed
  • 1 jar (16oz) tomato-based salsa (medium or mild)
  • 1 cup low-sodium chicken broth
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet or Dutch oven over medium-high heat. Add ground turkey and break into small crumbles with a wooden spoon.
  2. Cook the turkey until no longer pink, about 5-7 minutes. Drain excess grease if there is more than a tablespoon.
  3. Lower heat to medium. Add diced onion and cook for 2 minutes until softened.
  4. Add minced garlic and cumin, stirring constantly for 30 seconds until fragrant. Do not let garlic burn.
  5. Pour in salsa, drained white beans, and chicken broth. Sprinkle smoked paprika over the mixture.
  6. Stir well, scraping the bottom of the pan to release browned bits.
  7. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 15 minutes, stirring every 5 minutes.
  8. Taste and adjust seasoning with salt, pepper, or lime juice as needed.
  9. Serve hot with optional toppings like avocado, cheddar cheese, sour cream, cilantro, or lime wedges.

Notes

Rinsing the white beans is crucial to remove excess sodium and canned taste. For best flavor, let the chili rest for 10 minutes after cooking. This recipe freezes well for up to 3 months. If using canned chicken instead of turkey, add it at the end just to heat through.
