Description

A velvety, savory soup made with jarred roasted red peppers and smoked Gouda cheese. It provides whole-food fuel with high protein and fiber, ready in just 30 minutes.


Ingredients

  • 2 jars (12 oz each / 680g drained) roasted red peppers packed in water
  • 1 medium yellow onion, diced (200g)
  • 3 cloves garlic, minced
  • 4 cups (960ml) low-sodium vegetable broth
  • 8 oz (225g) smoked Gouda cheese, shredded
  • 2 tablespoons (30g) unsalted butter
  • 1 teaspoon smoked paprika
  • 1/2 cup (120ml) heavy cream (optional)
  • Salt and black pepper to taste
  • Crusty bread for serving
  • Fresh parsley or chives, chopped (optional)
  • Extra shredded Gouda for topping

Instructions

  1. Melt butter in a large pot or skillet over medium heat. Add diced onion and cook for 3-4 minutes until soft and translucent.
  2. Add minced garlic and smoked paprika; cook for 1 minute until fragrant, stirring constantly to prevent burning.
  3. Pour in roasted red peppers (with juices) and vegetable broth. Scrape up any bits from the bottom of the pot.
  4. Bring to a simmer and let bubble for 5 minutes to meld flavors.
  5. Remove from heat. Blend the soup using an immersion blender or a regular blender (in batches if necessary) until smooth.
  6. Return soup to low heat. Gradually stir in shredded smoked Gouda until melted and creamy.
  7. Stir in heavy cream if using. Adjust consistency with more broth if too thick, or simmer longer if too thin.
  8. Taste and adjust with salt and black pepper.
  9. Ladle into bowls, top with extra Gouda and fresh herbs, and serve immediately with crusty bread.

Notes

Use jarred roasted red peppers for convenience. Shred your own cheese for better melting. If using a regular blender, let soup cool slightly and blend in batches to avoid steam burns. The soup thickens as it cools; add broth or milk when reheating. This soup does not freeze well due to the dairy; freeze the base before adding cheese if necessary.
