  • 2 tablespoons butter, melted (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or cooking spray, optionally lining the bottom with parchment paper.
  2. In a medium mixing bowl, whisk together the flour, baking powder, salt, and 1 teaspoon of cinnamon until combined.
  3. In a separate large bowl, beat the softened butter and ¾ cup granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or stirring gently until just combined. Do not overmix.
  6. Pour in the apple cider and mix until just combined. The batter will be thin. Pour into the prepared loaf pan and smooth the top.
