Ingredients
- 1 cup (240ml) pure apple cider
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ cup (50g) granulated sugar (for coating)

- 2 tablespoons butter, melted (for coating)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or cooking spray, optionally lining the bottom with parchment paper.
- In a medium mixing bowl, whisk together the flour, baking powder, salt, and 1 teaspoon of cinnamon until combined.
- In a separate large bowl, beat the softened butter and ¾ cup granulated sugar together until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed or stirring gently until just combined. Do not overmix.
- Pour in the apple cider and mix until just combined. The batter will be thin. Pour into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If browning too quickly, cover loosely with foil after 30 minutes.
- Remove from oven and let cool in the pan for 10 minutes, then transfer to a cooling rack.
- While the loaf is still warm, brush the top with melted butter. Mix the coating sugar and cinnamon, then sprinkle generously over the buttered top.
- Let cool completely before slicing.

For a more intense apple flavor, simmer the cider on the stove for 10-15 minutes to reduce it by half before using. Ensure baking powder is fresh for proper rising. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months. Do not refrigerate as it dries out the loaf.
