Chicken Salad Lettuce Wraps

Description

A fresh, high-protein, and low-carb chicken salad served in butter lettuce cups. This easy-to-make lunch is perfect for back-to-school, avoiding soggy sandwiches while offering a crunchy, creamy, and customizable meal.


Ingredients

  • 2 cups shredded rotisserie chicken (about 300g)
  • 1/3 cup (80g) mayonnaise
  • 2 tablespoons (30g) plain Greek yogurt
  • 2 stalks celery, finely diced (about 1/2 cup)
  • 1/2 cup red grapes, halved (about 75g)
  • 2 tablespoons fresh dill, chopped (about 10g)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • Black pepper (to taste)
  • 1 head butter lettuce, leaves separated

Instructions

  1. Let rotisserie chicken sit at room temperature for 10 minutes to make shredding easier. Pull meat off bones, discard skin and bones, and place shredded chicken in a large mixing bowl.
  2. Dice celery into small, uniform pieces and halve the grapes. Place them in a separate bowl.
  3. In a small bowl, whisk together mayonnaise, Greek yogurt, garlic powder, salt, and black pepper until smooth and creamy.
  4. Add diced celery and grapes to the bowl with the chicken. Pour the dressing over the top.
  5. Gently fold everything together using a silicone spatula, being careful not to mash the grapes. Add fresh dill and fold gently. Taste and adjust seasoning if needed.
  6. Wash butter lettuce and pat leaves completely dry with paper towels. Separate leaves from the stem, selecting the largest and most intact ones.
  7. Scoop 2-3 tablespoons of chicken salad into the center of each lettuce leaf. Fold sides over and roll up from the bottom like a burrito. Secure with a toothpick if necessary.
  8. Store in airtight containers in the fridge until ready to pack or serve.

Notes

Ensure lettuce leaves are completely dry to prevent sogginess. Do not freeze, as the lettuce will turn to mush and the mayo-based dressing may separate. The chicken salad keeps well in the fridge for up to 3 days. For a dairy-free version, skip the Greek yogurt or use dairy-free mayo. If grapes are too sweet, add a squeeze of lemon juice to the dressing.
