Description

  • 1 cup (200g) light brown sugar, packed

  • 2 large eggs + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon kosher salt
  • ½ teaspoon cinnamon
  • 1 ½ cups packed grated zucchini (squeezed dry)
  • 2 cups (340g) semi-sweet chocolate chips
  • ½ cup toasted walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line two half-sheet baking pans with parchment paper.
  2. Wash and trim zucchini ends. Grate on small holes of a box grater. Squeeze excess moisture out using a clean kitchen towel until damp but not dripping. Set aside.
  3. In a large bowl, beat softened butter, brown sugar, and white sugar on medium-high speed until light and fluffy (2-3 minutes).
  4. Add eggs and extra yolk one at a time, beating well after each addition. Mix in vanilla extract.
  5. In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  6. Turn mixer to low. Gradually add dry ingredients to wet mixture. Mix just until flour disappears.
  7. Fold in squeezed zucchini and chocolate chips using a spatula.
  8. Scoop dough onto prepared baking sheets, spacing 2 inches apart. For thicker cookies, chill dough for 30 minutes.
  9. Bake for 10-12 minutes until edges are lightly golden but centers look slightly soft.
  10. Cool on pan for 5 minutes, then transfer to a wire rack to cool completely.
  11. Store in airtight containers or freezer bags. Flash-freeze before bagging for long-term storage.

Notes

Squeeze zucchini thoroughly to prevent greasy cookies. Do not overbake as they firm up while cooling. Dough can be chilled for thicker cookies or frozen raw for later baking.
