These chewy ginger molasses cookies feature a crackled sugar-coated top and a soft, spicy center. They are easy to make, stay fresh for days, and are perfect for gifting or cozy winter snacking.

- 1 cup (225g) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar
- 1 cup (200g) packed brown sugar
- 1/2 cup (120ml) regular unsulphured molasses
- 1 large egg, room temperature
- 2 teaspoons pure vanilla extract
- 2 3/4 cups (340g) all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon salt
- 1/2 cup (100g) granulated sugar (for coating)
Instructions
- Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar on medium-high speed for about 3 minutes until light and fluffy.
- Add the egg and vanilla extract, beating on medium speed until combined. Pour in the molasses and beat for another minute until smooth and glossy.
- In a separate medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.
- Gradually add the dry ingredients to the wet mixture on low speed. Mix just until the flour disappears to avoid tough cookies.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
- Scoop about 2 tablespoons of dough per cookie and roll into balls. Roll each ball in the extra granulated sugar to coat completely.
- Place sugar-coated dough balls on prepared baking sheets, leaving 2 inches between them.
- Bake for 10-12 minutes, rotating pans halfway through. Cookies are done when edges are set but centers look slightly soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Ensure butter is softened but not melted. Do not skip the chilling step as it prevents spreading and improves texture. Store in an airtight container at room temperature for up to 5 days. For extra softness, add a slice of bread to the container.
