Chewy Fall Maple Brown Butter Cookies with Toasted Pecans

  • Author: Lisa

Description

These chewy, fudgy cookies feature nutty brown butter, rich maple syrup, and toasted pecans for a sophisticated fall treat that is easy to make and impossible to resist.

Ingredients

Scale
  • 1 cup (226g) unsalted butter
  • 1 cup (200g) packed brown sugar (dark preferred)
  • ½ cup (100g) granulated sugar
  • 2 tablespoons (30ml) 100% pure maple syrup
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (110g) toasted pecans, chopped
  • Flaky sea salt, optional for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Toast pecans in a small skillet over medium heat for 3-4 minutes until fragrant and slightly darker. Let cool completely, then chop roughly.
  3. Brown the butter in a large skillet or saucepan over medium heat, stirring constantly until it foams, settles, and develops brown specks with a nutty aroma (about 5-7 minutes). Remove from heat and pour into a heat-proof bowl. Let cool for 10-15 minutes until warm but not hot.
  4. In a large mixing bowl, whisk the cooled brown butter, brown sugar, granulated sugar, maple syrup, egg, and vanilla extract vigorously for 2 minutes until glossy.
  5. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  6. Gently fold the dry ingredients into the wet mixture using a spatula until just combined. Do not overmix.
  7. Fold in the chopped toasted pecans.
  8. Scoop dough into 2-tablespoon balls and place on baking sheets, spacing them 2 inches apart. For best results, chill dough for 30 minutes.
  9. Bake for 12-14 minutes until edges are golden brown and centers look slightly soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Sprinkle with flaky sea salt if desired while warm.

Notes

Ensure brown butter is cooled to room temperature before mixing to prevent greasy dough. Chilling the dough helps prevent excessive spreading. Toasting pecans significantly enhances flavor. Do not overbake; cookies firm up as they cool.
