  • 2 large sweet potatoes (about 1 lb / 450g)
  • 2 cups cooked chicken, shredded (rotisserie or canned)
  • 1/2 cup hot sauce (e.g., Frank’s RedHot)
  • 2 tablespoons unsalted butter or dairy-free butter alternative
  • 1/2 cup dairy-free ranch dressing
  • 2 stalks green onions, sliced
  • Optional: 1/2 cup dairy-free cheddar cheese
  • Optional: Celery leaves

Instructions

  1. Wash sweet potatoes and poke holes all over with a fork. Microwave on high for 5 minutes, flip, then microwave for another 5 minutes until tender. Alternatively, roast at 400°F (200°C) for 45-60 minutes.
  2. While potatoes cook, shred the chicken. In a medium bowl, combine shredded chicken with hot sauce and melted butter. Toss to coat evenly.
  3. Slice cooked sweet potatoes lengthwise. Gently scoop out some flesh to create a ‘boat’ shape, leaving about 1/2 inch attached to the skin. Mash the scooped-out flesh and stir it back into the buffalo chicken mixture.
  4. Stuff each potato boat generously with the buffalo chicken mixture. If using cheese, sprinkle it on top.
  5. Microwave stuffed potatoes for 1-2 minutes (or broil for 3 minutes) until cheese is melted and bubbly.
  6. Drizzle generously with dairy-free ranch dressing and sprinkle with sliced green onions. Serve immediately.

Notes

Poking holes in the sweet potatoes is crucial to prevent them from exploding in the microwave. For crispy skin, microwave for 5 minutes then broil for 2-3 minutes. The scooped-out potato flesh adds creaminess to the filling. Store ranch separately to prevent sogginess. Do not freeze as sweet potato texture may become grainy.
