  • 1 cup (200g) granulated sugar
  • 1 cup (220g) dark brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup (150g) toffee bits (Heath bars crushed)
  • 1 cup (120g) pecans, chopped and toasted
  • Flaky sea salt, optional for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Melt the butter in a medium saucepan over medium heat. Stir constantly until it foams, turns light amber, and smells like toasted nuts (5-7 minutes). Immediately pour into a heatproof bowl to stop cooking.
  3. Whisk the granulated and dark brown sugars into the warm brown butter until glossy. Whisk in eggs one at a time, followed by vanilla extract.
  4. Add flour, baking powder, and salt. Gently fold with a spatula until just combined; do not overmix.
  5. Fold in chopped pecans and toffee bits, reserving a small handful for topping.
  6. Spread batter into prepared pan. Sprinkle reserved pecans, toffee, and flaky sea salt on top.
  7. Bake for 25-30 minutes until edges are golden and center is just set (toothpick should have moist crumbs).
  8. Cool in pan for at least 20 minutes before lifting out and slicing into squares.

Notes

Brown butter is the key flavor component; do not skip this step or let it burn. Room temperature eggs prevent the butter from seizing. Do not overbake, as blondies continue to cook in the pan after removal. They taste better the next day as flavors meld.
