  • 1 cup fresh sage leaves, rinsed and patted dry
  • 3 cloves garlic, minced
  • 4 ounces (115g) pancetta, diced
  • Freshly cracked black pepper
  • ½ cup (50g) grated Parmesan or Pecorino cheese (certified gluten-free)
  • 1 wedge lemon

Instructions

  1. Prep ingredients: Dice pancetta, mince garlic, and pat sage leaves completely dry. Grate cheese and set aside.
  2. Heat a large skillet over medium heat. Add diced pancetta and cook for 3-4 minutes until crispy and golden. Remove with a slotted spoon, leaving rendered fat in the pan.
  3. Bring a large pot of salted water to a boil. Add gnocchi and cook for 2-3 minutes until they float. Remove immediately with a slotted spoon and add directly to the skillet with the pancetta fat.
  4. Reduce heat to medium-low. Add butter to the skillet. Melt and watch closely for 5 minutes until it foams, settles, and turns deep amber with a nutty aroma.
  5. Toss in sage leaves and fry for 30-60 seconds until crisp. Add minced garlic and stir for 30 seconds until fragrant.
  6. Return pancetta to the pan. Toss gnocchi to coat in the brown butter sauce. Remove from heat.
  7. Sprinkle with grated cheese and toss gently to melt. Squeeze lemon juice over the top, add black pepper, and serve immediately.

Notes

Do not overcook the gnocchi; pull it as soon as it floats to avoid mushiness. Use unsalted butter to control salt levels since pancetta and cheese are salty. If the sauce looks too dry, add a splash of starchy gnocchi water to emulsify. Ensure all ingredients like cheese and pancetta are certified gluten-free if you have celiac disease.
