Description

A make-ahead breakfast solution featuring ripe bananas, rolled oats, and chocolate chips baked in a muffin tin. These cups are kid-approved, freezer-friendly, and perfect for busy school mornings.


Ingredients

  • 3 cups Old-Fashioned Rolled Oats
  • 2 large Ripe Bananas (mashed)
  • 2 large Eggs
  • 1 cup Milk (whole, skim, almond, or oat)
  • 2 tablespoons Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • ½ cup Dark Chocolate Chips
  • Optional: ½ cup Walnuts or Pecans
  • Optional: ½ cup Blueberries
  • Optional: 1 scoop Protein Powder

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly with butter/cooking spray.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth.
  3. Add eggs, milk, honey (or maple syrup), and vanilla extract to the mashed bananas. Whisk until well combined.
  4. Add rolled oats, baking powder, cinnamon, and salt to the wet mixture. Stir until oats are fully coated.
  5. Gently fold in chocolate chips (and nuts, if using).
  6. Divide batter evenly among the 12 muffin cups, filling each about ¾ full.
  7. Bake for 20-25 minutes until tops are golden brown and a toothpick inserted comes out clean.
  8. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Store in the refrigerator for up to 5 days or freeze for up to 3 months.

Notes

Use ripe bananas for maximum sweetness and moisture. Do not use instant oats as they turn to mush. For vegan version, substitute eggs with flax eggs and use maple syrup. For gluten-free, use certified gluten-free oats. Coat chocolate chips in a teaspoon of flour to prevent sinking.
